BISTRO MIYAMASU is a modern bistro restaurant that specializes in ”Charcuterie” where 80 varieties of wine, 20 varieties of “Saison Beers”, and 8 regular weekly draft craft beers on tap that will satisfy all your cravings. The venue’s design concept is a coastal “vacation house,” where you can invite close friends and leisurely spend your time in a luxurious atmosphere. Enjoy more than 20 kinds of charcuterie sausages prepared by hand by craftsman charcutier (sausage-maker) chefs, and a range of seasonal fish and vegetables, in a relaxed and luxurious atmosphere.“Charcuterie” refers to processed pork such as sausage, ham, pate, and rillette, and is derived from the words ”Chair = meat” and “Cuit = cooked.” The craftsman who specialize in this are called “charcutiers.” Chef Sakamoto is one of the charcutiers who has a wealth of valuable experience as a Japanese who has studied charcuterie in France.
